For this new summer IPA, we went a little over the top with hops. Minimalism and austerity have been the watchwords of fashionable West Coast IPA the last few years– lean malt, lean body, no kettle hops, clean textures, scant bitterness. We love IPA like that, IPA built with the taut dynamism of Pilsner, but every once in a while, we get the itch to make an IPA that packs a little more punch and bite. Gala is that beer. It’s not heavy on ABV; this is squarely in classic, single IPA territory for the West Coast. Rather, we loaded up the kettle and whirlpool more than usual, cramming in every form of our selected Mosaic and Simcoe lots that we could think of. We pushed the BUs up closer to pre-2015 levels. The bitterness won’t melt your face, but expect some punch that reminds you of yesteryear.
More than anything this is an ode to the interplay of two of our very favorite hops. Mosaic and Simcoe get a decent amount of airtime together in our beers, in everyone’s beers, but this is our only unadulterated expression of the two together. Expect big notes of mango and grapefruit as well as plenty of resinous, dank, and catty edges. Join us for the party and come play in this sandbox of hop-saturated maximalism.
