Archipelagos is a complex farmhouse cuvée conditioned on calamansi. This beer is a blend of 9 casks from five different batches in our wood cellar, each chosen for its subtle yeast-forward characteristics and soft acidity. In addition to the time spent aging on calamansi, the beer was also lightly dry hopped with whole leaf aged Cascade, which amplifies notes of citrus rind, spice, and apricot.
