our latest free-form IPA riffs on one of our favorite pub recipes from the past few years. we took the bones of a beer called Worldwide Handsome and replaced two of the fruit-forward hops in that beer, Eldorado and Dolcita, with a new (to us) NZ hop called Kohatu. we’re always looking to diversify the pantry of Southern Hemisphere hops that we use, and based on the description of Kohatu that we got from our hop brokers there, we thought this would be a good place to plug it in and see how it performs. we coupled all of that with some unusual (again, for us!) cellaring touches that we learned from our pallies at Green Cheek in an effort to crank up the green intensity and bitterness in the beer.
