Our final blended stout for 2025 is straight shooting and classic. It’s a Bourbon barrel-aged stout that pulls from five different beer streams and six different batches of beer brewed over the course of two years. In fact, this beer contains one of the biggest age ranges of stout that we have ever blended together in a single cuvee. The gap between the oldest and youngest beer in the blend is over 25 months.
The Opposite of Talking isn’t listening, per Fran Lebowitz, the opposite of talking is waiting. It is an apt aphorism for making these sorts of time-intensive beers. This beer is distinguished by its classic Bourbon character– top notes of oak, red fruit, brown sugar and caramel abound. The malt profile here leans a bit more toffee-forward than many of our other blends. We included some young and spiky rye stout to add a hint of roast and tannin, which helps cut through the sweetness, and two casks that were used for wine-aging before being used to age whiskey added subtle notes of jam and berry to the finished blend.
