What is the most famous trio in the world of food and beverage? Bacon, lettuce, tomato? Straw-berry, chocolate, vanilla? Campari, vermouth, gin? Lime juice, rum, and pretty much anything else? Can you imagine an ice cream parlor or a sandwich shop or a bar not serving those classic combinations? It would be crazy not to. Why would any business pass on serving something so inarguably delicious?
In the world of hops, the undisputed holy trinity of modern brewing is Citra, Simcoe, and Mosaic.
And shockingly, shockingly, we never have made an IPA with just these three hops until now.
Maybe we were trying to march to our own drummer, to prove a point that you could make delicious and modern West Coast IPA without defaulting to using the trinity. Regardless, we’re changing that now with Shine Dream Smile. We’re going heavy on our selected lots of these PNW hops and leaning into multiple forms of each: classic pellets, concentrated lupulin charges, and even some isolated, lot-specific terpenes. Shine (Mosaic) Dream (Simcoe) Smile (Citra) is our portrait of the modern American IPA in its purest form.
